Cranberry Salad

From the kitchen of Nellie Harrell here's a fruity and tart jelled salad that is a welcome relief from super sweet options.

Ingredients
  • 1 lb. raw cranberries, chopped
  • 1 cup sugar
  • 1 small pkg. raspberry jello
  • 1 small pkg. strawberry jello
  • 3 cups boiling water
  • 1 cup crushed pineapple with juice
  • 1 cup seedless grapes (red or black), chopped
  • 1 cup red apple, chopped
  • 1 cup pecans, chopped
Directions
  • Cranberry Salad - from the kitchen of Nellie Harrell (my wife Kimberley's grandma)
  • 1 lb. raw cranberries, chopped
  • 1 cup sugar
  • Pour sugar over chopped cranberries. Stir. Let set one hour.
  • 1 small pkg. raspberry jello
  • 1 small pkg. strawberry jello
  • 3 cups boiling water
  • 1 cup crushed pineapple with juice
  • 1 cup seedless grapes (red or black), chopped
  • 1 cup red apple, chopped
  • 1 cup pecans, chopped
  • In a 9x13 dish mix sugared cranberries, pineapple, grapes, apple and pecans.
  • Bring water to rolling boil. Measure out 3 cups. Add jello and stir to dissolve. Once dissolved, pour over chopped ingredients in dish. Stir. Refrigerate until set.
  • This is my wife's favorite family recipe. I agree. Enjoy!

We have this for Thanksgiving, but often make it for other Holiday gatherings. It's always a big hit.
